A Delicious Thanksgiving Alternative

This recipe was shared with me by a former student’s parent. We had celebrated Thanksgiving with the class and one of my parents shared this Japanese Fruit PieĀ  with them. After sampling, I had to have the recipe to prepare for our Thanksgiving dinner. Although, it could never replace the 2 favorite recipes, it was very well received and enjoyed.

Ingredients:

1 stick of Butter or Margarine melted

2 Eggs

1 tsp. Vinegar

1 cup Sugar

2 tsp. Vanilla

1/2 cups Raisins

1/2 cups Nuts

1/2 cups Coconut

1 unbaked 9″ Pie Shell

Directions:

1. Preheat oven to 300 degrees.

2. Combine eggs, vinegar, sugar, and vanilla and beat together well.

3. Add butter or margarine.

4. Add raisins, nuts, and coconut and mix together.

5. Pour into a 9″ unbaked pie shell.

6. Bake at 300 degrees for approximately 50 minutes.
